Add the sliced peaches, cinnamon, nutmeg, and light brown sugar. Stir gently to combine. Cook the peaches for about 5-7 minutes or until they are tender and release their juices. Remove the skillet from the heat; set aside. In a small bowl, whisk to combine lemon juice, vanilla, and cornstarch, then stir in the peach filling. Cover the skillet and set aside off heat.
  • For the Topping:
  • In a small bowl, combine 1 tablespoon sugar and 1 teaspoon cinnamon; set aside.
  • In a separate mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. Add the buttermilk and melted butter. Stir until just combined. Do not overmix.
  • Use your hands to tear off about 1-inch pieces of cobbler topping and space them ½ inch apart on top of the peaches in the skillet. Sprinkle with the cinnamon sugar. Place the skillet in the preheated oven, and bake for about 18 to 22 minutes until the cobbler topping is golden brown and the filling thickens.
