Ingredients
  

  • 2 lbs strawberries hulled and quartered
  • cup granulated sugar adjust to taste depending on the sweetness of your strawberries
  • 1 teaspoon cornstarch
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon vanilla extract
  • ½ cup water , divided

Instructions
 

  • In a medium saucepan, combine the strawberries, granulated sugar, lemon juice, and ¼ cup water. Place the saucepan over medium-high heat and bring the mixture to a boil. Allow the strawberries to cook for about 5 to 6 minutes, stirring occasionally to prevent sticking, until they become soft and release their juices.
  • In a separate bowl, mix the cornstarch and the remaining ¼ cup of water until the cornstarch is fully dissolved. Gradually stir in the cornstarch mixture into the sauce and continue to cook, stirring until the sauce thickens enough to coat the back of a spoon, about 5 minutes.
  • Remove the saucepan from the heat and stir in the vanilla extract. Let the sauce cool for a few minutes. The sauce will thicken further as it cools. Once the sauce has cooled, you can use it immediately or transfer it to a jar or airtight container and store it in the refrigerator for up to a week.
  • If you prefer a smoother sauce, you can use an immersion blender or regular blender to puree the cooked strawberries before adding the cornstarch slurry. This will result in a smoother texture without strawberry chunks.

  • To reheat: strawberry sauce can also be enjoyed straight from the fridge without reheating. However, if you want to warm it up, remove the desired amount of strawberry sauce from the refrigerator. Transfer the sauce to a small saucepan or microwave-safe dish. If using a saucepan, heat the sauce over low heat, stirring occasionally, until warmed through. If using a microwave, heat the sauce in short intervals, stirring in between, until warmed to your desired temperature. Be careful not to overheat the sauce, as it can become too runny if heated excessively. Once warmed, remove from heat or microwave and serve as desired.
