Easy Dinner Rolls

These homemade dinner rolls are the perfect addition to any meal, whether you're hosting a large family gathering or just looking to add a little something special to your weeknight dinner. Made with simple ingredients like flour, eggs, and butter, this recipe is easy to follow and comes together in no time. The dough is mixed in a stand mixer, making the process even easier and ensuring consistent results every time.

Ingredients
  

  • 250 ml ( about 1 cup) warm 2% milk or water (110F to 115F)
  • 4 large eggs , room temperature
  • 200 g (14 tablespoons) unsalted butter softened
  • 100 g (½) granulated white sugar
  • 3 teaspoons kosher salt
  • 1 kg (8 cups)bread flour or all-purpose flour
  • 17 g (2 tablespoons) instant dry yeast

For Brushing the Dinner Rolls

  • 113 g (1 stick) butter

Instructions
 

  • Line a 13'' x 18'' rimmed baking sheet with parchment paper; set aside. In the bowl of a stand mixer, combine the yeast, 1 cup of flour, and 1 cup of warm water (about 110 to 115 F). Let sit for 10 to 15 minutes until the mixture becomes frothy. In another bowl, combine the remaining flour, salt, and sugar. Set aside.
  • Add the softened butter and eggs to the stand mixer bowl with the yeast mixture. Using the dough hook attachment, mix on low speed until the ingredients are well combined.
  • Add the flour mixture to the stand mixer bowl in 3 to 4 increments, mixing on low speed after each addition until the dough comes together and is smooth and elastic about 8 minutes.
  • Form the dough into a ball and place it in a large, greased bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free area for about 1 to 2 hours or until it has doubled in size.
  • Preheat the oven to 375F (190C). Once the dough has risen, punch it down gently to release any air bubbles. Divide the dough into 24 equal pieces, about 70g each. Roll each piece into a ball and place them on the prepared baking sheet, leaving some space between them for rising.
  • Cover the dough balls with a clean kitchen towel and let them rise in a warm, draft-free area for about 30 to 45 minutes or until they have doubled in size. Bake the rolls for 20 to 25 minutes or until they are golden brown and sound hollow when tapped.
  • While the rolls are baking, melt 1 stick (113g) of butter in a small saucepan or in the microwave. Once the rolls are done, remove them from the oven and transfer them to a wire rack to cool for a few minutes. Brush the melted butter over the tops of the warm rolls using a pastry brush. Serve the rolls warm or at room temperature.

Notes

How to Store & Re-Heat
  • Storing: Allow the dinner rolls to cool completely to room temperature. Store the rolls in an airtight container or a resealable plastic bag. Keep the rolls at room temperature for up to 3 days.
  • Reheating: Preheat your oven to 350°F (175°C). Remove the dinner rolls from the container or bag and place them on a baking sheet or in a baking dish. Brush the rolls with melted butter or water to prevent them from drying out. Cover the rolls loosely with aluminum foil. Bake the rolls for 10 to 15 minutes or until they are heated through and soft again. Remove the aluminum foil and bake for an additional 5 minutes, or until the rolls are lightly browned and crispy on the outside. Serve the reheated rolls immediately. Note: Avoid reheating the dinner rolls in the microwave, as this can cause them to become tough and rubbery. Reheating in the oven is the best method to restore the soft and fluffy texture of the rolls.
Make-Ahead
After the dough has risen and you've shaped the rolls, place them on a baking sheet lined with parchment paper or in a greased baking dish. Cover the rolls tightly with plastic wrap and refrigerate them for up to 24 hours. When you're ready to bake the rolls, remove them from the refrigerator and let them sit at room temperature for about 30 minutes to an hour or until they have come to room temperature and have slightly risen. Preheat the oven to the specified temperature and bake the rolls according to the recipe instructions. Note: If you're planning to freeze the rolls, follow the same steps above, but freeze the rolls instead of refrigerating them. Place the rolls in a resealable plastic bag and freeze them for up to 2 months. To bake the frozen rolls, remove them from the freezer and let them thaw at room temperature for a few hours before proceeding with step 3. Then, bake them according to the recipe instructions. Making dinner rolls ahead of time can save you time and stress on the day of your event or meal, while still providing the delicious and comforting taste of freshly baked bread.
How to Freeze
Once the rolls have been shaped and risen, place them on a baking sheet lined with parchment paper or in a greased baking dish. Cover the rolls tightly with plastic wrap and freeze them on the baking sheet for several hours or until they are firm. Once the rolls are firm, transfer them to a resealable plastic bag or airtight container, and label with the date and contents. Freeze the rolls for up to 2 months. To bake the frozen dinner rolls: Remove the rolls from the freezer and place them on a baking sheet lined with parchment paper or in a greased baking dish. Cover the rolls loosely with plastic wrap and let them thaw at room temperature for about 2 to 3 hours or until they are soft and slightly risen. Preheat the oven to the specified temperature and bake the rolls according to the recipe instructions. Note: If you're planning to reheat the rolls, instead of baking them from frozen, thaw the rolls in the refrigerator overnight and then reheat them in the oven at 350°F (175°C) for about 10 to 15 minutes or until they are heated through. Freezing dinner rolls is a great way to have freshly baked bread on hand anytime you want it. Just be sure to label the rolls with the date and contents, and store them properly in airtight containers or bags to maintain their freshness.
