Ingredients
  

  • 4 sweet potatoes , peeled and cut into 1-inch cubes
  • ¼ cup avocado oil , plus more for drizzling potatoes after cooked
  • ¼ cup honey
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon fresh nutmeg , grated
  • cup roughly chopped pecans , optional
  • teaspoon kosher salt

Instructions
 

  • Heat the oven to 400 degrees F and arrange a rack in the middle.
  • While the oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
  • Place sweet potatoes on a baking sheet lined with parchment paper, and drizzle with avocado oil and honey. Sprinkle with cinnamon, nutmeg, and kosher salt over the potatoes and toss to coat. Roast until golden brown and tender when pierced with a knife, about 25 to 30 minutes. Serve roasted sweet potatoes with a drizzle of honey and a scattering of pecans.

How to Store & Re-Heat
To store: Let them cool to room temperature, and then transfer them to an airtight container or a resealable plastic bag. You can store roasted sweet potatoes in the refrigerator for up to 4 days. 
To reheat: There are a few options, which as preheating the oven to 350°F (175°C). Then, spread the roasted sweet potatoes on a baking sheet and heat them in the oven for 10-15 minutes or until heated. In the microwave, transfer the roasted sweet potatoes to a microwave-safe dish and heat them in the microwave for 1-2 minutes or until heated through.
Make-Ahead
Follow the recipe as directed and roast them until they are tender and caramelized. Let them cool completely to room temperature. Transfer the roasted sweet potatoes to an airtight container or a resealable plastic bag and store them in the refrigerator for up to 4 days.
How to Freeze
Let the roasted sweet potatoes cool to room temperature. Next, transfer the sweet potatoes to a freezer-safe container or a resealable freezer bag. Make sure to remove as much air as possible to prevent freezer burn. Label the container or bag with the date and the contents. Place the container or bag in the freezer and store for up to 3 months. To re-heat them, Preheat the oven to 350°F (175°C). Spread the frozen sweet potatoes on a baking sheet and drizzle with oil. Bake for 20-25 minutes or until heated through, stirring occasionally.
