Ingredients

For the Marinade:

For the Lemon sauce:

  • 1 teaspoon olive oil or canola oil
  • 6 garlic cloves , finely minced
  • 3 teaspoons ginger , finely minced
  • ½ teaspoon red pepper flakes
  • ½ teaspoon ground black pepper
  • ½ cup fresh lemon juice
  • zest from 2 large lemons
  • 4 tablespoons rice vinegar
  • 4 tablespoons honey
  • 1 tablespoon cornstarch

Instructions

  • In a large zip lock bag, combine chicken wings and all the ingredients for the marinade. Massage a few times to disperse the marinade evenly. *(Try to squeeze out as much air as possible from the bag). Let marinate for at least 30 minutes or overnight in the refrigerator.
  • Line a large baking sheet lined with aluminum foil. Place a baking rack on top. Lightly spray cooking oil on the rack to prevent sticking.
  • Align the marinated lemon chicken wings on the rack, skin side up. Sprinkle kosher salt and ground black pepper onto the wings. Flip and do the same on the other side.
  • Place wings on the middle rack and bake at 450 F for about 45 minutes or until fully cooked and a bit charred. *(Finish them off under the broiler for a crisper skin).😉

For the Lemon sauce:

  • While baking the wings, prepare the lemon glaze. In a small saucepan pan, heat oil until warm. Add garlic and ginger. Cook and stir until fragrant. Then, add lemon juice, rice vinegar, lemon zest, red pepper flakes, and honey. Cook until simmering.
  • In a small bowl, whisk cornstarch starch along with 4 tablespoons of water until fully dissolved. Then, swirl it into the sauce. Stir to combine and remove the pan from the stove.
  • When the lemon chicken wings are ready, remove them from the oven and give them a bath in the lemon garlic sauce. Serve hot. Enjoy!!!😋🍻

Notes

How to Store & Re-Heat
  • To store: Keeping them in a container and wrapped tightly in plastic or aluminum foil is essential. They can be stored in the fridge for up to 3 days. When it comes time to reheat the wings, you can use a few different methods depending on your preference.
  • To reheat: Place them on a baking sheet and bake for 10-15 minutes at 350°F (175°C) or in the microwave by placing them on a microwave-safe plate and covering them with a damp paper towel for 1-2 minutes on high. If you have an air fryer, you could also reheat the wings by preheating the air fryer to 400°F (200°C) and cooking the wings for 5-7 minutes until they are heated through and crispy. Be sure to check the internal temperature of the chicken with a thermometer to ensure it reaches 165°F (74°C) before eating.
Make-Ahead
Lemon Chicken Wings can be made ahead of time and stored for convenience. To store in the fridge, let the wings cool to room temperature and place them in a container or wrap them tightly in plastic or aluminum foil, which can be stored in the fridge for 3 days. To store in the freezer, let the wings cool to room temperature and place them in an airtight container or a freezer-safe bag, which can be stored in the freezer for 3 months.
When it's time to reheat the wings, preheat your oven to 350°F (175°C), place the wings on a baking sheet, and bake for 10-15 minutes if reheating from the fridge or 15-20 minutes if reheating from the freezer. Be sure to check the internal temp. of the chicken with a meat thermometer, and ensure it reaches 165°F (74°C) before serving. By making Lemon Chicken Wings ahead of time, you can save time and reduce stress when it comes time to serve them, making them perfect for meal prep or entertaining.
How to Freeze
To freeze Lemon Chicken Wings, first, let them cool to room temperature after cooking. Then, place the wings in a single layer on a baking sheet and freeze for 1-2 hours or until they are partially frozen. This helps prevent them from sticking together in the container or bag. Once the wings are partially frozen, transfer them to a freezer-safe container or bag, removing as much air as possible from the container or bag before sealing.
Next, label the container or bag with the date and name of the dish, and place it in the freezer. Lemon Chicken Wings can be frozen for up to 3 months. To reheat the wings, thaw them in the fridge overnight and then reheat them using one of the earlier methods. It's important to note that freezing and thawing can affect the texture of the chicken, so the wings may be slightly less crispy than they were initially. However, they will still be delicious and an excellent quick and easy meal or snack option.
