  • Heat oil to 350° F in a medium saucepan or cast-iron skillet. In a large bowl, combine all ingredients until no lumps remain. The batter should be smooth. Pour batter into a funnel with a ½'' diameter hole making sure to plug the hole with your finger.
  • Holding the funnel about 1 '' above the oil. Quickly swirl and zigzag the batter around the oil. Each funnel cake should use about ½ cup if using an 8" pan.
  • Fry until golden brown on the first side ( about 2 minutes); carefully turn and continue frying until golden brown on the other side. Transfer to a plate with a paper towel—dust with powdered sugar or any topping of your choice. Enjoy!

How to Store & Re-Heat
To store: Let it cool completely to room temperature and place it in an airtight container or ziplock bag. You can keep it at room temperature for up to 2 days. It's essential to avoid stacking the Funnel cakes on each other, as this can cause them to become soggy.
To reheat: You can use an oven, microwave, or toaster oven. For the oven method, preheat your oven to 350°F (175°C) and place the Funnel Cake on a baking sheet lined with parchment paper. Bake for 5-10 minutes until heated through and crispy.
For the microwave method, place the Funnel Cake on a microwave-safe plate and heat for 10-20 seconds until heated through. Be aware that this method may cause the Funnel Cake to become slightly soggy. For the toaster oven method, place the Funnel Cake in the oven and bake for 5-10 minutes until heated through and crispy. It's best to avoid adding toppings until just before reheating to prevent them from becoming soggy.
Make-Ahead
Make the batter according to the recipe instructions, and cover the bowl with plastic wrap. Transfer the batter to a squeeze bottle or a plastic bag and refrigerate until ready. The longer the batter sits, the thicker it may become. You can thin it out by adding more milk or water if needed. It is best to make the batter on the same day you plan to fry the Funnel Cake to ensure the best results.
When you're ready to fry the Funnel Cake, remove the batter from the refrigerator and let it sit at room temperature for 10-15 minutes to come to room temperature. How to Freeze

Note that freezing the Funnel Cake may cause it to lose some crispy texture, but it will still be tasty. It's best to freeze the Funnel Cake without any toppings and add them after reheating.
