1fresh jalapeño or 2 pickled jalapeño, thin slices
Instructions
Chopped the cabbage, carrot, jalapeños, and onion in thin slices w/ a big knife or mandoline slicer. Combine the cabbage and carrot in a large bowl and pour the boiling water over the mixture.
Allow the mixture to steep for 30 to 60 seconds, then immediately rinse under cold running water; drain well, return the cabbage and carrot to the bowl. Mix in the onion and jalapeños, combine the remaining ingredients in a separate bowl and then pour over the cabbage mixture and stir.
Cover and refrigerate the curtido for at least 2 hours, preferably at least a day before serving.
