Ingredients
  

  • ½ head cabbage , shredded
  • 1 large carrot , grated
  • 1 small yellow or red onion , thinly sliced
  • ½ cup rice vinegar or distilled vinegar
  • ¼ cup water
  • ½ teaspoon kosher salt (to taste)
  • 2 teaspoons light brown sugar
  • 2 teaspoon dried Mexican oregano
  • 1 teaspoon red pepper flakes ( to taste)
  • 1 Bay leaves
  • 1 fresh jalapeño or 2 pickled jalapeño , thin slices

Instructions
 

  • Chopped the cabbage, carrot, jalapeños, and onion in thin slices w/ a big knife or mandoline slicer. Combine the cabbage and carrot in a large bowl and pour the boiling water over the mixture.
  • Allow the mixture to steep for 30 to 60 seconds, then immediately rinse under cold running water; drain well, return the cabbage and carrot to the bowl. Mix in the onion and jalapeños, combine the remaining ingredients in a separate bowl and then pour over the cabbage mixture and stir.
  • Cover and refrigerate the curtido for at least 2 hours, preferably at least a day before serving.

How to Store
This recipe can be stored in an airtight container in the refrigerator for up to 1 week. The longer it sits, the more it will develop flavor.
Make-Ahead
Making This recipe ahead is a great way to save time and ensure that the flavors have time to develop fully. After preparing according to the recipe, cover the bowl with a tight-fitting lid or plastic wrap and place it in the refrigerator for at least 2 hours, preferably overnight.
This allows the vegetables to marinate and pickle in the vinegar solution, resulting in a tangy and flavorful dish. Before serving, stir quickly to redistribute the liquid and flavorings. If the recipe seems too dry, add a little vinegar, water, sugar, and salt to refresh it.
