Ingredients
  

  • 203 g (1-½ cups) all-purpose flour, spooned into measuring cup and leveled-off
  • 3 teaspoons Saigon ground cinnamon
  • 2 large eggs , room temperature
  • 100 g (½ cup) granulated sugar
  • 100 g (½ cup) light brown sugar, packed and leveled off
  • ½ cup avocado oil or ½ cup (1 stick) unsalted butter, melted and slightly cooled
  • ½ cup buttermilk or whole milk
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon apple brandy , optional
  • ¼ teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1 cup peeled , cored, and finely diced Granny Smith apples, from 1 apple
  • 50 g (½ cup) toasted pecans, chopped

Instructions
 

  • Preheat the oven to 350 °F and set an oven rack in the middle position. Line with parchment paper a 9-inch loaf pan or spray it with nonstick cooking spray. Set aside.
  • Mix the light brown sugar, toasted pecans, and cinnamon until evenly combined in a small bowl. Set aside. In a medium bowl, sift together the flour and baking powder. Set aside.
  • In a medium bowl, whisk together the sugars, salt eggs, apple brandy, and vanilla until combined. Next, add the avocado oil followed by the buttermilk and pure vanilla extract, and whisk until just evenly combined. Gradually add the flour mixture to the batter and whisk until just combined, do not overmix!. Finally, add the apples to the batter and fold with a rubber spatula until evenly incorporated.
  • Spoon about ⅔ of the batter into the prepared pan. Sprinkle about ⅔ of the brown sugar-cinnamon mixture on top of the batter. Spoon the remaining batter over the top, followed by the remaining brown sugar-cinnamon mixture. Using a butter knife, swirl the layers by making a zig-zag motion through the batter once in each direction (don't overdo it!). Tap the pan on the counter a few times to settle and even out the batter.
  • Bake the Apple Bread for about 50 minutes or until the bread is golden brown and a cake tester or toothpick inserted into the center comes out clean. Let cool in the pan on a cooling rack until cool enough to handle. Invert the bread out of the pan, and serve warm or at room temperature. Enjoy!

How to Store & Re-Heat
  • To store: Let it cool completely, then wrap it tightly in plastic or aluminum foil. Alternatively, you can store it in an airtight container. It can be stored at room temperature for up to 2 days or in the refrigerator for up to a week. If you want to freeze the bread, wrap it in plastic wrap and then aluminum foil, and it should be kept in the freezer for up to 3 months.
  • To reheat: Preheat the oven to 350°F. If you stored the bread in the refrigerator or freezer, allow it to come to room temperature before reheating. Wrap the bread in foil and place it in the oven for 10-15 minutes or until it is warmed. Alternatively, microwave individual slices for 10-15 seconds each or until warm. If you want to toast the Apple Bread, place it in a toaster or oven and toast until it is lightly browned and crisp. Once the Apple Bread is reheated, serve it plain or with your favorite toppings, such as butter or whipped cream.
Make-Ahead
Apple Bread can be made ahead of time to save time and effort. Follow the recipe to make it ahead, then let the bread cool completely. Once cooled, wrap the bread tightly in plastic or aluminum foil and store it in the refrigerator for up to 2 days or in the freezer for up to 3 months. When you're ready to serve, remove the bread from the refrigerator or freezer and let it come to room temperature. Once it has come to room temperature, you can reheat it using one of the earlier methods or serve it as is. 
How to Freeze
To freeze Apple Bread, let it cool completely, then wrap it tightly in plastic or aluminum foil. Place the wrapped bread in a freezer-safe bag or container and label it with the date. It can be stored in the freezer for up to 3 months. When you're ready to enjoy the bread, remove it from the freezer and let it thaw at room temperature for a few hours or overnight in the refrigerator. Once thawed, you can reheat the bread using one of the earlier methods or enjoy it.
