Ingredients
  

  • 1 pound linguine or any pasta you like
  • 6 tablespoons unsalted or salted butter , softened
  • Kosher salt , as needed
  • Freshly grated Parmesan , optional
  • 2 tablespoons Italian parsley , chopped (optional)

Instructions
 

  • In a large pot, bring 4 quarts of water to a rapid boil over high heat. Add 2 tablespoons kosher salt to the boiling water, stirring to dissolve. Add the pasta to the boiling water and cook it according to the package instructions, stirring occasionally, until it's al dente. Drain the pasta in a colander; set aside.
  • Return the pot to low heat, and add the butter. Once the butter is melted, add the pasta and toss it to coat with the butter.
  • Remove the pot from the heat and garnish with grated Parmesan and/ or chopped parsley (if using) over the pasta.
  • Divide the Buttered Noodles into serving bowls and enjoy hot.

How to Store & Re-Heat
Storing:
  • Allow the Buttered Noodles to cool down to room temperature before storing.
  • Store the leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating:
  • To reheat Buttered Noodles, you can microwave or reheat on the stovetop.
  • If using a microwave, transfer the desired amount of Buttered Noodles to a microwave-safe bowl and cover it with a damp paper towel. Microwave on high for 1-2 minutes, stirring halfway through, until heated through.
  • If using a stovetop, heat a skillet over medium heat and add the desired amount of Buttered Noodles. Cook, stirring occasionally, until heated through, about 5-7 minutes.
Remember to add a splash of water or reserved pasta cooking water to the noodles before reheating, as this will help to prevent the pasta from drying out. Avoid reheating the Buttered Noodles multiple times, as this can affect the texture and quality of the dish.
Make-Ahead
Fideo a la Manteca can be made and stored in the refrigerator for up to 3 days. To make ahead, cook the pasta as directed and toss it with butter. Let the pasta cool down to room temperature before transferring to an airtight container and storing it in the refrigerator for up to 3 days. You can also add any desired mix-ins or toppings at this stage, such as cooked vegetables or grated Parmesan cheese. When you’re ready to serve, reheat the pasta using the microwave or stovetop methods described above. 
How to Freeze
To freeze Fideo a la Manteca, let the pasta cool down to room temperature before transferring it to a freezer-safe container. You can also portion the pasta into individual servings before freezing to make it easier to defrost later. Be sure to label the container with the date and contents. Fideo a la Manteca can be stored in the freezer for up to 1 month.
To defrost, transfer the container to the refrigerator and let it thaw overnight. Reheat the pasta using the microwave or stovetop methods described above. Remember that the pasta's texture may be slightly softer after freezing and reheating, but it will still be flavorful and delicious.
