How to Make Indian Spiced Red Lentil Soup

Heat the oil in a large soup pot over medium-high heat. Add the onions, bell pepper, tomato, serrano pepper, and carrots. Cook, stirring, until the vegetables soften, about 10 minutes.
Add the knorr chicken bouillon, cayenne pepper, ground black pepper, garam masala or curry powder, turmeric, garlic, and ginger, and cook for 1 minute more.
Add the hot water, unsweetened coconut milk, and lentils to the pot. Bring to a boil over high heat, then reduce the heat to low and simmer for about 15 minutes or until the lentils are tender and starting to break down.
Add the chopped apples. Using a stick blender, puree until smooth and creamy (alternatively, let the Indian Spiced Red Lentil Soup cool slightly, then puree in 2 batches in the hand blender.

- 3 medium carrots , diced
- 1 large yellow onion , chopped
- 4 Roma tomatoes , chopped
- 1 honey crisp apple or granny smith , peeled, seeded, and chopped
- 3 medium celery stalks , washed and sliced crosswise ½-inch thick
- 6 cups of hot water
- 1 cup canned unsweetened coconut milk
- 1 cup red lentils , washed
- One 1-inch piece of ginger root , chopped or grated
- 1 green serrano chile or jalapeno , split and seeded
- 2 cups shredded , skinless cooked chicken from a store-bought rotisserie chicken or leftovers
- 1 tablespoon garam masala or curry powder
- ¼ teaspoon turmeric
- ¼ teaspoon cayenne pepper
- ¼ teaspoon ground black pepper
- 1 tablespoon Knorr chicken bouillon , to taste
- Juice from 1 large lemon or lime
- 1 bunch fresh cilantro , chopped plus for garnishing
